| Background: Rigorous winemaker vineyard assessment took place to
ascertain the optimum harvest dates for individual Chardonnay
vineyards. Once this date was determined, the fruit was
harvested at night, while the temperatures were low, preserving
the vibrant fruit flavours. Upon delivery to the winery, fruit parcels
were individually pressed and clarified. Fermentation was
initiated with a selection of premium yeast strains. Cool
temperatures were maintained throughout to retain volatile
flavour and aroma compounds. A variety of winemaking
techniques were employed to build complexity and texture into
the finished wine including extended yeast lees contact, French
oak maturation, and malolactic fermentation. The use of free
run juice exclusively, has produced a wine with a full flavoured
soft palate, while extended lees contact has contributed a
creamy mouthfeel. |

| Palate: Intense, ripe stonefruits and preserved lemon flood the palate,
while a creamy soft texture with balanced acidity ensures length
and persistence. The fleshy rich fruit and subtle oak nuances linger
on the palate. This wine is ideal for current enjoyment or short to
medium term cellaring. |
