Cab Sauv From The Vale With A Difference

From good strong Italian stock, and doing things the hard way. That’s Serpico – both this wine and the famous NYC cop it’s named after.

It’s a unique style for Australian wine – based on old-school Italian winemaking. And who better to give it life than our mate Frank Mitolo? McLaren Vale Master, Italian in his own blood. Try for yourself!

The Bottom Line

  • $80 per bottle RRP!
  • Made with air-dried grapes in a traditional Italian method
  • No need to splurge on the whole dozen - get six!

From the maker:

“Serpico, the flagship Mitolo Cabernet, is made using the Amarone technique of drying grapes before fermentation. This process concentrates flavour contributing mid palate plushness, complexity and mouth coating yet silky tannins. It’s a unique wine that is rich and structured yet has the balance of elements crucial to the Mitolo style.”

Winery Information
Fruit is hand picked quite early (around 13° Baume) and placed onto 10kg drying crates. The grapes are left to dry in temperature and humidity controlled sheds for approximately six weeks in the traditional Amarone manner. This results in a 30% loss in bunch weight. After drying, the wine is fermented on skins for two weeks and then is left for a further three weeks before pressing. This extended time on skins actually helps to soften the wine as the small, aggressive tannins are bound up in the process leaving only larger, silky tannins in the wine. The wine is then stored in oak barrels for twelve months before careful barrel selection precedes blending and bottling.

"Great wine for the discounted price (but RRP of $80 is a far cry)"

Vintage: 2011

This is definitely not an $80 wine as is suggested in the red sticker (which then had the $30 price tag on it), & I challenge anyone to provide an example of where it is actually selling for $80 (& not with reference to "RRP"). That said, using the 20% discount voucher from the "discounted" $30 list price it worked out to $24 delivered and that is a fair price for this quality ($30 would also be a stretch for this wine). If either the price was dropped or the discount voucher was offered again, I'd buy it again.
