The full and ripe palate has a creamy texture enhanced by powerful, silky tannins and, like the bouquet, displays elegant flavours of dark chocolate and red berries. There is a lingering persistence that is underpinned by fine acid. |

| Highlights |
The 2007 vintage was one of the earliest vintages on record due to it being a warm, dry year with relatively low yields. However, the conditions produced red wines with powerful tannins; a hallmark of any good Shiraz.
Selected parcels of fruit were harvested from both the Schobers and Provis Vineyards in the Clare Valley, and each component was made in small batches using traditional techniques. Fruit from the Provis vineyard provided density, while the Schobers vineyard contributed fragrance and mouth coating tannin. After harvest, the wine spent approximately eight days on skins, including a cold soak of 2‐3 days. The wine was open fermented in small batches before basket pressing and maturation in small French oak barrels. Post‐malolactic fermentation, the wine was racked out of oak every three months to allow natural clarification.
This is a carefully hand‐made wine that reflects some of the best the Clare Valley has to offer. |
