Just like the plain girl in high school who dazzles at the reunion, Semillon usually starts life as a gangly, unassuming youth but develops into something seriously seductive at just the right age. Semillon has been made in the Barossa for yonks, and is the Batman to sauv blanc's Robin in Margaret River's dynamic Sem Sauv Blanc white blends, but it’s in the Hunter Valley that this Semillon stuff really excels. Picked quite early, at relatively low potential alcohol levels, Semillon's as lean and lithe as a young wine but with a couple of years in bottle develops into one of the world’s great wine styles, a complex and beguiling drink full of lanolin, beeswax and toast.
