| Background: The production of “methode traditionelle” sparkling wines has been an integral part of the winemaking at Blue Pyrenees Estate for many years. Although hand picked fruit is often desired for the production of the premium cuvee juices, day time temperatures in Australia can mean that hand picked fruit is often quite warm when received into the press after a day’s picking. In 1992, the team at Blue Pyrenees decided to experiment with hand picking fruit in the middle of the night, under floodlights, to optimize both fruit condition and temperature. The results were amazing – crisp and clean cuvee juices of outstanding quality. The Midnight Cuvee was born! Nowadays the Blue Pyrenees team select the best fruit parcels, whilst on the vine, to be separated out from the rest and picked at night by hand to generate the juices that will become the Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass. The Blue Pyrenees Estate Midnight Cuvee is made entirely from estate grown fruit – predominantly Chardonnay with a touch of Pinot Noir. |
| Colour: Brilliant, pale straw in colour with a persistent, fine bead and fresh effervescence. |
| Nose: The aroma is delicate and complex with rich autolysis characters of freshly baked bread and yeast complemented by hazelnut and citrus fruits. |
| Palate: Gentle bubbles caress the palate to give a silky mouthfeel. The bright green apple flavoured palate exhibits a fine acid backbone. This is a wine of superb elegance, balance and finesse with a long, clean and lingering finish. |
