This is a wine that thinks outside the square, swapping pinot grigio for the traditional pinot noir that would normally combine with chardonnay to make serious sparkling wine.
The result is a classically framed sparkler, fine creamy mousse and squeaky clean finish, but with a flavour twist with grigio's distinctive spiced pear and tart apples coming to the fore.
