Cabernet sauvignon wines typically displays characters like blackcurrants, mulberries and mint with secondary characteristics like cedar, tobacco leaf and briar bush poking through. It is a grape well endowed with structural elements like natural grape acid and tannin that allow for longer term cellaring and is often blended with merlot to create softer, rounder styles.
