A Sauvignon Blanc Blend From The Breezy West Coast
Boom – a full, flavoursome, zesty number from Byron & Harold. One of our favourite regions, one of Australia’s most prolific up-and-coming wineries.
This one’s a blend of 88% Sauvignon Blanc, 10% Semillon, and 2% Chardonnay, so you’re getting plenty of punchy tropical bursts from the majority partner Sauv Blanc, balanced by a hint of crisp steely Semillon to round it out, and just a glimpse of Chardonnay. It’s ticking serious boxes as far as dry Whites go at any price. At this price? It’s up there with the absolute best!

These guys seriously know what they’re doing. Between the wine biz experience of the namesakes Paul Byron and Ralph (Harold) Dunning, and the vine and wine-wrangling of their co-conspirators, this is an outfit that that we reckon might be knocking on the door of “Winery of The Year” status somewhere down the track… Get in while the going’s good and the prices don’t include too much of a “famous” tax!
They were transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. 48 hours later the juice was cleanly racked and inoculated with VL3 yeast for Sauvignon Blanc and VIN13 yeast for Semillon.
The ferment temperature was kept at around 13- 14 °C, this helps retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post Ferment the wines were blended, fined with traditional additives, cold stabilized and bottled.
